Manhattan food writer Clark tailors her useful collection of more than 200 recipes for urbanites who have tiny kitchens, a penchant for chic fare and ready access to prepared foods at delis and salad bars. Recipes, whose ingredients must be “pristine and full of flavor,” are designed to be mixed and matched, like comfortable clothing. The soup section begins with a light tomato broth that can be served either on its own or as the base of several recipes that follow; flavorful hors d’ouevres-centerpieces like White Bean and Rosemary Dip can be used as spreads, stuffings and sauces. More elaborate?but still speedy?main courses that suggest themselves as party fare include Pistachioed Red Snapper and turkey cutlets sauteed and served with chestnuts, cranberries and heavy cream. Vegetable dishes range from Sauteed Fennel with Pernod to a simple Sauteed Zucchini. In the varied desserts chapter, such unusual offerings as Avocado Mousse (with kirsch and confectioners’ sugar) and Fresh Berries in Peppered Balsamic Vinegar stand out. The pared-down (seven ingredients) Instant Lasagna earns its name with the advice not to parboil the noodles?just soak them in hot water “while you prepare the filling.”

5 Stars Practical but yummy and creative
Great shortcuts and simple, short recipes in this book. Great hors d’oeuvres and entree ideas, not run-of-the-mill. Another great thing is the author will not make you use oodles of pots/pans if just one will do. I’ve had this paperback for almost 10 years, and all of the recipes I’ve tried so far have been spot-on.

5 Stars Instant Transformation to a Gourmet Chef!
This is my all-time favorite cookbook (and I own a ton of them). The recipes are easy to prepare and usually contain fewer than ten ingredients. I have found at least fifteen dishes that are always dependable, quick to prepare, and exceptionally popular with guests. The only downside is that very few of the recipes are particularly health-conscious — heavy cream and butter are two of the most common ingredients. Nonetheless, I recommend this cookbook heartily to anyone who likes good food but doesn’t have hours to spend in the kitchen. Too bad it is now out of print!

This is a terrific book for people who want to prepare 5-star recipes, but don’t have the time to spend an entire day inthe kitchen. It’s especially good for dinner parties, since the recipes are sophisticated, but EASY! Great for people who don’t really cook a lot, but want to fake it.

4 Stars Super Easy!
I found this in a discount store for five bucks, and as a person who doesn’t care to spend time in the kitchen or know much about cooking I couldn’t resist. I really like it. It includes many new and different recipies that are easy, fast and interesting, not the same old boring pasta or soup dishes. If you can find it and you like books in this genre, definitely pick it up.

This cookbook gives beginners several easy dishes to choose from. I love the pasta recipes. My only issue is that a lot of the recipes called for ingredients not commonly found already in the kitchen, making last minute dinner ideas almost impossible.

    1 Star Disapointing cookbook
    Check this book out at the library before spending your hard earned cash on it. I was really disappointed in it. It’s claim is healthy meals in minutes. Many of the recipes fat contents are a bit high for my taste. Yes, there are a few that are low in fat.. Many of the recipes are not ‘everyday meals’ to feed the family. If I could give it a half a star, I would.. Major disappointment..

    Prevention’s Healthy One-Dish Meals in Minutes delivers on every promise in its lengthy moniker. Hard to believe, but you still need to add a word–delicious. This book is excellent for beginning, unsure, or disorganized cooks, as well as for anyone more experienced and health-conscious. The food is interesting middle-of-the-road fare, mostly using meat, poultry, and seafood in modest 4-ounce portions, and lots of non-fat or reduced-fat products. The Express Recipes, ready in 15 minutes, are amazing. In 20 to 30 minutes, recipes for intelligently updated classics will also win smiles.

    5 Stars My Favorite Cook book
    I have had this cookbook since Prevention first published it. Although I have many cookbooks, this one is my absolute all-time favorite for quick, healthy, delicious meals. Every week, when I plan my meals, I use at least 3 out of this book. I can’t say enough good about it. The food is low fat, healthful, easy and quick to prepare and doesn’t require alot of exotic ingredients. In fact there is a list in the introduction of the basic foods you need to have on hand to prepare the dishes in the books. There are even suggestions on the side for the use of leftovers. Get this one! I’m getting another for my daughter.

    5 Stars One of my most-often used cookbooks!
    My husband and I both love to cook, and we have about six dozen cookbooks representing a wide range of cuisines. Yet I keep coming back to this one cookbook again and again. I’ve had it for about five years, I think, and probably a month hasn’t gone by that I haven’t cooked at least a few recipes out of it — which I can’t say for most of our cookbooks.

    The meals are generally pretty easy to prepare; very few of the recipes require any special equipment or techniques that would throw off the beginner. There’s a nice variety, with at least a few real “keepers” in every category (e.g., soups, sandwiches, stir-fries, meat-and-potatoes, etc.).

    I especially like the fact that they give nutritional information for each dish, although I wish they included fiber (and sorry folks, no carb counting). The dishes are lower in fat and lower in calories than usual, and yet they don’t require a lot of silly, time-consuming techniques to do so.

    Also, many recipes have sidebars with hints about variations on the recipe, or how to use the leftovers to make a new dish.

    The one thing I find a little annoying — or more, amusing — is that some of the pictures do NOT look like the finished dishes. The funniest one is the recipe for microwave polenta: the picture clearly shows *grill marks* on the polenta, yet the recipe never involves an oven or broiler, much less a grill. But the important thing is that the recipes come out tasting good.

    My two favorites are Moroccan Chicken and Indonesian Rice with Chicken. The only recipe that really bombed (and we’ve probably tried 80% of them by now) was the Javanese Tempeh Curry. But the picture looks so delicious… haha.

    Buy this book while you still can; I’m planning to buy all the used copies I can find to give to all my friends and relatives.

    5 Stars Really like this one
    This cookbook is great for those of us who are busy, but who want healthful and tasty meals. The dishes are quick and easy to prepare and use common pantry items. The nutritional content is provided for each recipe, which is great if you are watching your calorie or fat (or any other) intake. Another feature I like is a “To Your Health” box that provides interesting and pertinent nutritional information about some of the ingredients used in the recipe. I rented this from the library but plan on purchasing it–even though it is out of print now!

    This is a perfect cookbook that beautifully brings out the beauty and delicious flavors of Filipino cuisine.

    I’m actually happy that it doesn’t have all the “exotic” stuff such as dinuguan, goat meat stew, paksiw etc.

    It’s presented in a modern, slightly Americanized way which I think is proper for filipinos and non filipinos alike.

    I love the pictures! Very beautifully done.

    If you like Asian Cuisine this book is good. Have a nice picture and good procedure how to prapare it’s recipe.

    5 Stars Gastronomic Success
    Though the book sensibly substitutes ingredients found in the Philippines for items that are more readily available in local US stores, the compromise in taste is not noticable (if there even is). All in all, it is a short but very helpful book that taught me how to cook a few homestyle dishes that I know, miss and love. If there is any bane to it, it would be that it did not have more recipes tucked away in its small, but informative pages.

    This took forever to get to me. When I received it I only liked one recipe in it. I like simple, this book calls for alot of different foods. I haven’t even used it yet.

    4 Stars Wok Cooking Made Easy
    This cookbook had more unusual recipes than I anticipated from paging through online. The pictures were very good. The book was purchased as a birthday gift for my adult son who is very much involved in wok cookery and he seemed pleased with the content. Haven’t had any feedback from him yet as to how these recipes are working out for him.
